Here is my recipe for Spicy Chicken. It is a crock pot recipe because that is my favorite way to cook meat.
4 tsp. salt
2 tsp. paprika
1 tsp. chili powder
1 tsp. onion powder
1 tsp. thyme leaves
1 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper
4 lbs. chicken, I've been using drumsticks, skinned if desired but not necessary
1 cup chopped onions
Thoroughly combine salt and all the spices in a small bowl. Slice onions and place in the bottom of a crock pot. Rinse chicken and pat dry with paper towels. Rub (or sprinkle) the spice mixture into chicken. This recipe said something about putting it all in a zip lock bag over night. I don't have time for that sort of thing and don't see the point. I placed chicken in crock pot directly on top of sliced onions. Sprinkle any left over spices on chicken. The recipe says to cook on low for 8-12 hours. I usually cook it on med for something like 4-6 hours. The chicken turns out super tender with a good flavor.
